Within a given species of plant, the crop with the higher refractive index will have a higher sugar content, higher mineral content, and a higher protein content. This adds up to a sweeter tasting, more minerally nutritious food with a lower nitrate and water content and better storage characteristics. A broad generalization: produce over 12 BRIX is considered good because crops above this value are usually not bothered by insects or diseases. Range of 0-32 % BRIX, resolution of 0.1%. Units come with a fruit and vegetable reference table.
